Title: Lisa Maronian's Chocolate Shortbread Cookies

Yield: 40 Servings

8ozUnsalted Butter, at room
  Temperature
3 1/2ozConfectioners Sugar
1tsVanilla Extract
10ozAll Purpose Flour
1/2cCoocoa Powder
1/4tsSalt

Preheat oven to 350 degrees. In the workbowl of the food processor, combine butter and sugar. Add vanilla and process until creamy. Toss together flour, cocoa, and salt and add to the butter mixture. Process until just combined. Wrap dough in plastic and chill briefly, just until firm enough to roll. Turn onto lightly floured board and roll until 1/4 inch thick. Cut with 2 1/2 inch heart cookie cutter. Transfer to parchment paper lined cookie sheet and bake 8 to 10 minutes.
